A delightful dinner recipe that features juicy chicken served over buttered noodles tossed with garlic, parsley, and optional parmesan.

  • 4 boneless, skinless chicken breasts (or thighs, if preferred)
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme (optional)
  • 2 cups egg noodles (or your preferred type of pasta)
  • 4 tablespoons unsalted butter
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • 1 clove garlic, minced
  • 1/4 cup grated parmesan cheese (optional, for extra flavor)
  • 1/2 cup chicken broth (or pasta water, for extra flavor)

Instructions

  1. Season the chicken breasts (or thighs) with salt, pepper, garlic powder, onion powder, and dried thyme (if using). Heat 2 tablespoons of olive oil in a large skillet and cook the chicken for 6-7 minutes per side until golden brown and cooked through.
  2. Bring a large pot of salted water to a boil. Cook the egg noodles according to the package directions, 7-9 minutes until al dente. Reserve 1/2 cup of the pasta cooking water, then drain the noodles.
  3. In the same skillet, melt 4 tablespoons of butter over medium heat. Add the minced garlic and sauté for 1-2 minutes. If desired, add the reserved pasta water or chicken broth and stir to combine.
  4. Toss the cooked noodles in the garlic butter sauce until evenly coated. Optionally add grated parmesan cheese and season with salt and pepper to taste.
  5. Plate the noodles and top with sliced chicken, garnishing with freshly chopped parsley before serving.
