Ingredients
Scale
1 ½ cups graham cracker crumbs
½ cup unsalted butter, melted
1 tablespoon granulated sugar
2 (8-ounce) packages of cream cheese, softened
1 cup granulated sugar
½ teaspoon vanilla extract
2 large eggs
1 cup semi-sweet chocolate chips
¼ teaspoon salt
Instructions
Preheat your oven to 325°F (163°C). Line a 9×9 inch baking pan with parchment paper, leaving overhang on the sides for easy removal later.
In a medium mixing bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until well combined.
Firmly press the crumb mixture into the bottom of the prepared baking pan to create an even layer.
In a large mixing bowl, beat the softened cream cheese and sugar with an electric mixer until smooth and creamy.
Mix in the vanilla extract, ensuring it’s well incorporated.
Add the eggs one at a time, mixing just until combined. Be careful not to overmix.
Gently fold in the semi-sweet chocolate chips until evenly distributed throughout the mixture.
Pour the cheesecake filling over the prepared crust, spreading it out evenly.
Place in the preheated oven and bake for 30-35 minutes, or until the edges are set and the center wobbles slightly.
Remove from the oven and allow the bars to cool in the pan for about 25 minutes. Transfer to the refrigerator and chill for at least 2 hours before cutting into squares.
Notes
Ensure the cream cheese is softened to room temperature for easy mixing.
Chilling the bars is crucial for easier cutting and better texture.
These bars can be topped with whipped cream or a drizzle of chocolate sauce if desired.
