1 cup unsweetened cocoa powder
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
1 cup granulated sugar
1 cup packed brown sugar
½ cup granulated sugar (for rolling)
1 cup Imperial margarine, softened
2 large eggs at room temperature
1 teaspoon vanilla extract
¼ teaspoon peppermint extract
60 unwrapped Hershey’s Mint Truffle Kisses
Instructions
Preheat oven to 375°F. Line two large baking sheets with parchment paper.
In a bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt until evenly distributed.
Using a mixer, beat granulated sugar, brown sugar, and softened margarine on medium speed for 3 to 4 minutes until light and fluffy.
Add eggs, vanilla extract, and peppermint extract to the creamed mixture; beat until fully combined.
Gradually add the dry ingredients to the wet mixture, mixing until just combined, scraping down the sides as needed.
Place ½ cup granulated sugar in a small bowl. Using a 1 tablespoon cookie scoop, portion dough, drop it into the sugar, and roll to coat evenly; arrange on baking sheets spaced 2 inches apart.
Bake at 375°F for 8 to 9 minutes until set.
Remove cookies from oven; immediately press a Hershey’s Mint Truffle Kiss into the center of each cookie.
Allow cookies to rest on baking sheets for 10 minutes, then transfer to wire racks until completely cooled.
Notes
Ensure the margarine is softened to room temperature for easy mixing.
For a stronger mint flavor, increase the peppermint extract slightly.
Cookies can be stored in an airtight container for up to a week.
