  • ½ cup granulated sugar (for rolling)
  • 1 cup Imperial margarine, softened
  • 2 large eggs at room temperature
  • 1 teaspoon vanilla extract
  • ¼ teaspoon peppermint extract
  • 60 unwrapped Hershey’s Mint Truffle Kisses

Instructions

  1. Preheat oven to 375°F. Line two large baking sheets with parchment paper.
  2. In a bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt until evenly distributed.
  3. Using a mixer, beat granulated sugar, brown sugar, and softened margarine on medium speed for 3 to 4 minutes until light and fluffy.
  4. Add eggs, vanilla extract, and peppermint extract to the creamed mixture; beat until fully combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined, scraping down the sides as needed.
  6. Place ½ cup granulated sugar in a small bowl. Using a 1 tablespoon cookie scoop, portion dough, drop it into the sugar, and roll to coat evenly; arrange on baking sheets spaced 2 inches apart.
  7. Bake at 375°F for 8 to 9 minutes until set.
  8. Remove cookies from oven; immediately press a Hershey’s Mint Truffle Kiss into the center of each cookie.
  9. Allow cookies to rest on baking sheets for 10 minutes, then transfer to wire racks until completely cooled.
