- 1/2 cup unsalted butter, softened
- 1/2 cup creamy peanut butter
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup semi-sweet chocolate chips (or melted chocolate for dipping)
- Optional: flaky sea salt for topping
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, cream together the butter, peanut butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together flour, baking soda, and salt. Gradually add dry ingredients to the wet mixture and mix until combined.
- Scoop tablespoon-sized balls of dough and place them on the prepared baking sheet about 2 inches apart. Flatten slightly with a fork.
- Bake for 9–11 minutes, or until edges are lightly golden.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
- Once cooled, dip half of each cookie in melted chocolate or drizzle on top. Sprinkle with flaky sea salt if desired. Let chocolate set before serving.

- Store cookies in an airtight container for up to one week.
- Feel free to substitute crunchy peanut butter for a different texture.
