1 box Lime Jello 3 oz
1 box Strawberry Jello 3 oz
6½ cups sweetened Desiccated Coconut divided
1½ cups plain Greek Yogurt divided
Instructions
Prepare the lime jello according to the package instructions, but reduce the water slightly to create a thicker consistency. Pour into a shallow dish and refrigerate until firm.
Once set, cut the lime jello into small cubes.
In a large bowl, combine half of the desiccated coconut with ¾ cup of Greek yogurt. Mix well.
Add the lime jello cubes to the coconut-yogurt mixture and gently fold to coat.
Using your hands, roll small spoonfuls of the mixture into balls, about 1-inch in diameter.
Roll each ball in the remaining desiccated coconut to coat thoroughly.
Repeat the process with the strawberry jello, preparing it according to the package, cutting into cubes, mixing with remaining coconut and yogurt, forming balls, and coating with the rest of the coconut.
Chill the jello balls for at least 1 hour before serving to set fully and allow flavors to blend.
Notes
Ensure the jello is set well before cutting to achieve neat cubes.
