1 cup unsalted butter, softened
1/2 cup powdered sugar
1 teaspoon vanilla extract
2 cups all-purpose flour
1/4 teaspoon salt
1/2 cup maraschino cherries, chopped
1/2 cup mini chocolate chips (optional)
Extra powdered sugar for dusting
Instructions
In a large bowl, cream together the softened butter and powdered sugar until the mixture is smooth and creamy.
Mix in the vanilla extract.
Gradually add the flour and salt, mixing just until combined.
Gently fold in the chopped maraschino cherries and mini chocolate chips.
Wrap the dough in plastic wrap and chill for at least 1 hour.
Preheat the oven to 325°F (165°C). Roll the chilled dough into 1-inch balls and place them on parchment-lined baking sheets.
Slightly flatten each ball with the bottom of a glass.
Bake the cookies for 14-16 minutes, or until the edges are just starting to turn golden.
Remove the cookies from the oven and let them cool slightly, then dust the tops with powdered sugar.
Notes
Be careful not to overmix the dough to maintain the delicate texture of the shortbread.
Keep an eye on the cookies while baking to avoid overbaking.
Adjust the amount of chocolate chips based on your preference.
