1 pound (450g) sausage meat (pork, turkey, or chicken)
Optional: 1/2 cup grated cheese (cheddar or your favorite cheese)
Optional: 1/4 cup breadcrumbs (for added texture)
Instructions
Preheat your oven to 400°F (200°C). This high temperature will ensure a golden, flaky crust.
In a skillet over medium heat, add a splash of olive oil and sauté the onion until translucent (about 5 minutes). Add the garlic and cook for an additional minute, stirring frequently to prevent burning.
In a large bowl, combine the sausage meat, sautéed onion and garlic, sage, thyme, salt, and pepper. If using, add the grated cheese and breadcrumbs for extra flavor and texture. Mix well until all ingredients are evenly incorporated.
On a lightly floured surface, roll out the puff pastry to smooth it out. Cut the pastry into rectangles, approximately 4 inches by 6 inches.
Place a generous spoonful of the sausage mixture along one edge of each pastry rectangle. Roll the pastry over the filling, sealing the edges with a little water. Ensure the seam is on the bottom to prevent unrolling during cooking.
Place the assembled rolls on a baking sheet lined with parchment paper. Brush the tops with the beaten egg for a golden finish.
Bake in the preheated oven for 25 minutes, or until the pastry is puffed and golden brown.
Allow the sausage rolls to cool slightly before serving. Enjoy them warm with your favorite dipping sauce.
