1 cup water
2 tablespoons granulated sugar
1/2 teaspoon salt
2 tablespoons unsalted butter
1 cup all-purpose flour
2 large eggs
1/2 teaspoon vanilla extract
Vegetable oil for frying
1/2 cup granulated sugar (for coating)
1 tablespoon ground cinnamon (for coating)
Instructions
In a medium saucepan over medium heat, combine water, sugar, salt, and butter. Bring to a gentle boil and then remove from heat. Stir in all the flour at once until a thick dough forms that pulls away from the sides of the pan.
Let the dough cool for 5 minutes, then beat in eggs one at a time, mixing thoroughly after each addition to create a smooth batter. Stir in the vanilla extract.
Heat vegetable oil in a deep pot to 350°F (175°C), ensuring there is about 2 inches of oil for frying.
Transfer the dough to a piping bag with a large round or star tip. Pipe 1-inch pieces directly into the hot oil, using scissors to cut the dough.
Fry the dough pieces in batches for 2–3 minutes, turning as needed until golden brown and crisp.
Remove poppers with a slotted spoon, drain on paper towels, then immediately toss them in the cinnamon sugar mixture to coat evenly.
Serve the churro poppers warm, optionally with chocolate or caramel dipping sauces for added indulgence.

For a fun twist, serve with chocolate or caramel dipping sauce.
If you don’t have a piping bag, use a zip-top bag with the corner snipped off as a substitute.
