Delightful cookies combining gooey cheesecake and heavenly cinnamon roll flavor, perfect for snacks or special occasions.

Ingredients

  • 1 cup Unsalted Butter (softened)
  • 1 cup Granulated Sugar
  • 1/2 cup Brown Sugar (packed)
  • 2 Eggs (room temperature)
  • 1 teaspoon Vanilla Extract
  • 2 cups All-Purpose Flour
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 2 teaspoons Ground Cinnamon
  • 8 oz Cream Cheese (softened)
  • 1/2 cup Powdered Sugar
  • 2 tablespoons Milk

Instructions

  1. Preheat your oven to 350°F (180°C).
  2. Cream together the softened butter, granulated sugar, and brown sugar until fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then add the vanilla extract.
  4. Whisk together the flour, baking soda, salt, and ground cinnamon in another bowl.
  5. Slowly add the dry ingredients into the butter mixture and mix until well combined.
  6. Mix the softened cream cheese and powdered sugar in a different bowl, adding the milk and beating until smooth.
  7. Scoop a tablespoon of cookie dough onto your cookie sheet, make a small dent in the center, and add a teaspoon of cream cheese filling. Top with another tablespoon of cookie dough.
  8. Bake for 10-12 minutes, or until golden brown around the edges.
  9. Cool on the cookie sheet for a few minutes, then transfer to a wire rack.

Notes

Let cookies cool for at least 10 minutes before moving them. Use room temperature butter and eggs for best results.
