Delicious Cinnamon Roll Cookies that combine the warm flavors of cinnamon rolls with the soft texture of cookies.

Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 large egg
  • 2 tsp vanilla extract
  • ½ cup brown sugar, packed (for filling)
  • 2 tsp ground cinnamon (for filling)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Whisk together flour, baking powder, salt, and 1 tsp cinnamon in a bowl.
  3. Cream the butter, granulated sugar, and brown sugar until fluffy.
  4. Add the egg and vanilla, mixing until creamy.
  5. Combine the dry ingredients with the wet ingredients until just mixed.
  6. Prepare the filling by whisking together brown sugar and remaining cinnamon.
  7. Roll out half the dough, sprinkle with the filling, and roll tightly into a log.
  8. Slice the log into ½ inch rounds and place on a baking sheet.
  9. Bake for 10-12 minutes, or until golden brown, then cool slightly before serving.

Notes

You can prepare the dough ahead of time and refrigerate. Customize with nuts or chocolate chips.
