A vibrant and nutritious salad featuring lentils, cucumbers, parsley, and a tangy olive oil dressing, celebrating the flavors of the Mediterranean.

Ingredients

  • 1 cup lentils
  • 2 cups water
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 small onion, chopped
  • 1 cucumber, diced
  • Salt and pepper, to taste

Instructions

  1. Rinse the lentils under cold water to clean them thoroughly. In a large pot, combine the rinsed lentils with 2 cups of water. Bring to a rolling boil over medium-high heat. Once boiling, reduce the heat to low, cover, and simmer for 20-25 minutes or until tender. Drain and let cool.
  2. Combine the cooled lentils, chopped parsley, diced cucumber, and chopped onion in a mixing bowl. Stir gently to mix.
  3. Whisk together the olive oil, lemon juice, salt, and pepper in a small bowl until emulsified.
  4. Pour the dressing over the lentil mixture and Toss gently to combine. Serve chilled or at room temperature.

Notes

This salad can be made ahead of time and stores well in the refrigerator.
