  • 1/2 cup sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/4 cup milk
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 2 tablespoons poppy seeds

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your loaf pan.
  2. Whisk together the flour, baking powder, baking soda, and salt.
  3. Cream the softened butter and sugar together until light and fluffy.
  4. Beat in the eggs, one at a time, then stir in the milk, lemon juice, and lemon zest.
  5. Add the dry ingredients to the wet ingredients and mix until just combined.
  6. Fold in the poppy seeds gently.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 30-35 minutes, or until a toothpick comes out clean.
  9. Cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

Notes

For best results, use room temperature butter and allow the loaf to cool fully before slicing.
