A delightful and healthy breakfast option featuring fluffy cloud bread filled with scrambled eggs, cheese, and optional turkey bacon.

Ingredients

  • Cloud Bread
  • 3 large eggs, separated
  • 3 tablespoons cream cheese, softened
  • 1/4 teaspoon cream of tartar
  • 1/8 teaspoon salt
  • Filling
  • 2 large eggs
  • 2 tablespoons milk
  • 1 tablespoon butter
  • 2 slices cheddar cheese or preferred cheese
  • 2 slices cooked turkey bacon or vegetarian alternative (optional)
  • Salt and pepper, to taste
  • Fresh herbs such as chives or parsley, for garnish (optional)

Instructions

  1. Preheat oven to 150°C. Line a baking sheet with parchment paper.
  2. In a clean bowl, whisk egg whites together with cream of tartar and salt until stiff peaks form.
  3. In a separate bowl, blend egg yolks with softened cream cheese until smooth.
  4. Gently fold the egg yolk mixture into the egg whites until just incorporated. Spoon the mixture to form 4 equal rounds on the prepared tray.
  5. Bake for 20 minutes or until golden and set. Allow to cool slightly before handling.
  6. While bread bakes, whisk 2 eggs, milk, salt, and pepper. Melt butter in a nonstick skillet over medium heat. Scramble eggs gently until just set.
  7. Arrange scrambled eggs, a slice of cheese, and turkey bacon or vegetarian option between two pieces of cloud bread. Garnish with fresh herbs if desired.
  8. Serve sandwiches warm.
