Cloud Bread
3 large eggs, separated
3 tablespoons cream cheese, softened
1/4 teaspoon cream of tartar
1/8 teaspoon salt
Filling
2 large eggs
2 tablespoons milk
1 tablespoon butter
2 slices cheddar cheese or preferred cheese
2 slices cooked turkey bacon or vegetarian alternative (optional)
Salt and pepper, to taste
Fresh herbs such as chives or parsley, for garnish (optional)
Instructions
Preheat oven to 150°C. Line a baking sheet with parchment paper.
In a clean bowl, whisk egg whites together with cream of tartar and salt until stiff peaks form.
In a separate bowl, blend egg yolks with softened cream cheese until smooth.
Gently fold the egg yolk mixture into the egg whites until just incorporated. Spoon the mixture to form 4 equal rounds on the prepared tray.
Bake for 20 minutes or until golden and set. Allow to cool slightly before handling.
While bread bakes, whisk 2 eggs, milk, salt, and pepper. Melt butter in a nonstick skillet over medium heat. Scramble eggs gently until just set.
Arrange scrambled eggs, a slice of cheese, and turkey bacon or vegetarian option between two pieces of cloud bread. Garnish with fresh herbs if desired.
Serve sandwiches warm.

Ensure the egg whites are whipped in a clean bowl for best results.
The cloud bread can be made ahead of time and stored in an airtight container.
