A delightful dessert combining creamy coconut and a buttery shortbread crust, perfect for any occasion.

Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup sugar
  • 1 cup all-purpose flour
  • 1 cup sweetened shredded coconut
  • 1/2 cup sweetened condensed milk
  • 1/2 cup chocolate chips (optional)
  • 1/4 cup toasted coconut for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking dish.
  2. Cream the softened butter and sugar together until light and fluffy.
  3. Mix in the flour until well combined.
  4. Press the mixture firmly into the bottom of the prepared baking dish to form a shortbread layer.
  5. Bake for 15 minutes or until lightly golden.
  6. Combine the sweetened shredded coconut and sweetened condensed milk in another bowl, stirring until thick and creamy.
  7. Pour the coconut mixture over the baked shortbread layer and spread it evenly.
  8. Sprinkle chocolate chips over the top (optional) and press them in gently.
  9. Return to the oven and bake for 20-25 minutes, until the coconut layer is golden.
  10. Allow to cool completely before cutting into squares.
  11. Sprinkle toasted coconut on top before serving.

Notes

Use room temperature ingredients for better blending. Allow to cool completely before cutting.
