113 g unsalted butter, melted
120 g all-purpose flour
200 g granulated sugar
2 teaspoons baking powder
0.5 teaspoon salt
240 ml milk
1 teaspoon vanilla extract
3 ripe bananas, sliced
100 g light brown sugar, packed
0.5 teaspoon ground cinnamon
50 g chopped walnuts or pecans (optional)
85 g chocolate chips (optional)
Instructions
Preheat oven to 190°C. Pour the melted butter into a 33 × 23 cm baking dish, tilting to ensure the base is evenly coated.
In a large mixing bowl, whisk together flour, granulated sugar, baking powder, and salt. Gradually add milk and vanilla extract, whisking until the batter is smooth and homogeneous.
Gently pour the batter over the melted butter in the baking dish without stirring. The batter will self-layer during baking.
Distribute the sliced bananas evenly over the batter, allowing them to settle naturally.
Combine brown sugar and cinnamon in a small bowl. Sprinkle the mixture generously over the bananas and batter. If desired, scatter optional nuts or chocolate chips across the surface.
Bake for 35–45 minutes until the cobbler is golden brown, bubbling at the edges, and a toothpick inserted near the center comes out with moist crumbs. Avoid overbaking.
Allow to cool for 10–15 minutes to set before serving warm in bowls.
