½ cup unsalted butter, melted
1 cup granulated sugar
2 large eggs
1 tsp vanilla extract
½ cup unsweetened cocoa powder
½ cup all-purpose flour
¼ tsp baking powder
¼ tsp salt
½ cup unsalted butter, softened
½ cup packed brown sugar
¼ cup granulated sugar
2 tbsp milk or cream
1 tsp vanilla extract
1 ¼ cups all-purpose flour (heat-treated)
1 cup mini chocolate chips
2 cups semi-sweet chocolate chips or candy melts
1 tbsp coconut oil (optional, for smoother coating)
Instructions
Preheat your oven to 350°F (175°C) and grease your 8×8-inch baking pan. In a bowl, whisk together the melted butter and sugar until combined. Add the eggs and vanilla, mixing until it’s nice and smooth. Then stir in the cocoa powder, flour, baking powder, and salt until just combined. Spread the mixture into the prepared pan and bake for 20–25 minutes. Cool completely in the pan before moving on!
Beat the softened butter with brown sugar and granulated sugar until light and fluffy. Add in the milk and vanilla, mixing well. Gradually mix in the heat-treated flour until everything is incorporated. Fold in mini chocolate chips. Scoop the cookie dough and roll it into 1-inch balls. Pop those in the fridge until firm.
Cut the cooled brownies into squares that are slightly larger than your cookie dough balls. Flatten one brownie square in your palm and place a cookie dough ball in the center. Wrap the brownie around the cookie dough, pinching the edges to seal it.
Melt your chocolate chips or candy melts with coconut oil in a microwave-safe bowl, using 30-second bursts and stirring in between. Once melted, dip each brownie bite into the chocolate, letting the excess drip off. Place them on a parchment-lined tray.
Chill your brownie bites in the fridge for about 15 minutes until the chocolate is set. Serve chilled or at room temperature.
Notes
Don’t rush the cooling process! Underbaked brownies will crumble, and chilled cookie dough makes wrapping easier.
