A comforting breakfast dish featuring fluffy baked eggs combined with creamy cottage cheese and cheddar, perfect for any morning.

Ingredients

  • 12 large eggs
  • 1 cup 2% cottage cheese
  • ½ teaspoon sea salt
  • ¼ teaspoon cracked black pepper
  • ½ cup shredded cheddar cheese
  • 2 tablespoons chopped fresh chives

Instructions

  1. Preheat your oven to 350ºF and prepare a silicone mold or muffin tin with non-stick cooking spray.
  2. Whisk the eggs in a mixing bowl until well combined and frothy.
  3. Stir in the cottage cheese, sea salt, and black pepper until evenly mixed.
  4. Fill each muffin cup with approximately ¼ cup of the egg mixture.
  5. Top each cup with shredded cheddar cheese, sprinkling an even layer over the egg mixture.
  6. Bake in the preheated oven for 18-22 minutes, or until the tops are set and golden.
  7. Allow to cool slightly before serving and garnish with fresh chives.

Notes

Consider preparing the egg mixture the night before for convenience. You can also use an air fryer at 320ºF for 10-12 minutes for a quicker option.
