Cranberry Bliss Bars are delicious dessert bars made with a blend of dried cranberries, white chocolate, and a creamy frosting that offers a perfect balance of sweet and tart.

  • 1 cup butter, softened
  • 1.25 cups brown sugar, packed
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon salt
  • 0.75 cup dried cranberries
  • 0.75 cup white chocolate chips
  • 4 ounces cream cheese, softened
  • 1.5 cups powdered sugar
  • 1 teaspoon lemon zest
  • 0.25 cup white chocolate, for drizzle
  • 0.25 cup dried cranberries, for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. In a large mixing bowl, cream together 1 cup of softened butter and 1.25 cups of packed brown sugar until light and fluffy. Add 3 large eggs one at a time, beating well after each addition. Stir in 1 teaspoon of vanilla extract.
  3. In a separate bowl, whisk together 2 cups of all-purpose flour, 0.5 teaspoon of baking powder, and 0.25 teaspoon of salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  4. Fold in 0.75 cup of dried cranberries and 0.75 cup of white chocolate chips. Spread the batter evenly into the prepared baking pan.
  5. Bake for 18-20 minutes, or until the edges are golden and a toothpick inserted into the center comes out clean. Allow the bars to cool completely in the pan.
  6. For the frosting, beat 4 ounces of softened cream cheese with 1.5 cups of powdered sugar and 1 teaspoon of lemon zest until smooth. Spread the frosting over the cooled bars.
  7. Melt 0.25 cup of white chocolate and drizzle it over the frosting. Sprinkle 0.25 cup of dried cranberries on top. Allow the chocolate to set before cutting into bars.
  8. Use a sharp knife to cut the bars into triangles or squares. Serve and enjoy!

Notes

  • Make sure the butter is softened for easy creaming.
  • Allow the bars to cool completely before frosting to prevent melting.
