1 sheet puff pastry, thawed
8 oz brie cheese, sliced
1/2 cup cranberry sauce
1/3 cup diced pancetta
1 tsp fresh thyme leaves
1 tbsp honey (optional)
Instructions
Preheat oven to 400°F (200°C). Roll out puff pastry and place on a parchment-lined baking sheet. Score a 1-inch border around the edges without cutting through.
Prick the center with a fork to prevent puffing. Bake for 10 minutes or until lightly golden.
While pastry bakes, cook pancetta in a skillet until crispy. Drain and set aside.
Layer brie slices over the center of the pre-baked pastry. Add dollops of cranberry sauce. Sprinkle cooked pancetta over the top.
Bake again for 10–12 minutes until brie is melted and pastry is golden brown.
Remove from oven, top with thyme and drizzle with honey if using. Rest 5 minutes, then slice and serve.
Notes
Use all-butter puff pastry for the best flavor and flakiness.
Don’t overload the tart with cranberry sauce—just enough to balance the richness.
Bake on parchment to prevent sticking and for easy cleanup.
