A beautiful and delicious Cranberry Cheesecake Cake with creamy cheesecake layers and tart cranberries.

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 1/2 cups fresh or frozen cranberries

Instructions

  1. Preheat the oven to 350°F (175°C) and grease your 9-inch round cake pan.
  2. Whisk together the flour, baking powder, baking soda, and salt in a medium bowl.
  3. Cream the softened butter and sugar in a large bowl until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla.
  5. Blend the dry ingredients into the wet mixture gradually.
  6. Beat the cream cheese and powdered sugar in a separate bowl until smooth.
  7. Pour half of the cake batter into the pan, spoon the cheesecake mixture on top, and then add the remaining cake batter.
  8. Sprinkle the cranberries on top of the batter.
  9. Bake for 45-50 minutes or until a toothpick comes out clean.
  10. Let it cool before serving.

Notes

For smoother cream cheese layer, ensure cream cheese is well-softened. Toss frozen cranberries in flour to prevent sinking.
