Cranberry Orange Mini Loaves are deliciously moist and bursting with flavor, perfect for holidays or any special occasion.

Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1/2 cup whole milk
  • 1/3 cup fresh orange juice
  • 1 tablespoon orange zest
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh cranberries
  • 1 cup powdered sugar (for glaze)
  • 23 tablespoons orange juice (for glaze)
  • Candied orange peel & sugared cranberries for topping (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease 4 mini loaf pans or line with parchment.
  2. In a large bowl, whisk together flour, baking powder, and salt.
  3. In a separate bowl, whisk sugar, melted butter, eggs, milk, orange juice, orange zest, and vanilla until smooth.
  4. Combine wet and dry ingredients, stirring gently until just combined.
  5. Fold in fresh cranberries.
  6. Divide the batter evenly among prepared mini loaf pans.
  7. Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.
  8. Let loaves cool for 10 minutes, then transfer to a wire rack.
  9. For glaze, mix powdered sugar with orange juice until smooth.
  10. Drizzle glaze over cooled loaves and top with candied orange peel and sugared cranberries, if using.
