- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 3/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1/2 cup whole milk
- 1/3 cup fresh orange juice
- 1 tablespoon orange zest
- 1 teaspoon vanilla extract
- 1 1/2 cups fresh cranberries
- 1 cup powdered sugar (for glaze)
- 2–3 tablespoons orange juice (for glaze)
- Candied orange peel & sugared cranberries for topping (optional)
- Preheat your oven to 350°F (175°C). Lightly grease 4 mini loaf pans or line with parchment.
- In a large bowl, whisk together flour, baking powder, and salt.
- In a separate bowl, whisk sugar, melted butter, eggs, milk, orange juice, orange zest, and vanilla until smooth.
- Combine wet and dry ingredients, stirring gently until just combined.
- Fold in fresh cranberries.
- Divide the batter evenly among prepared mini loaf pans.
- Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.
- Let loaves cool for 10 minutes, then transfer to a wire rack.
- For glaze, mix powdered sugar with orange juice until smooth.
- Drizzle glaze over cooled loaves and top with candied orange peel and sugared cranberries, if using.
