A rustic, no-knead artisan bread studded with cranberries, raisins, and walnuts, perfect for cozy meals.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 cup whole wheat flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 cup sugar
  • 1 teaspoon ground cinnamon
  • 1 cup warm water
  • 1/2 cup dried cranberries
  • 1/2 cup dried raisins
  • 1/2 cup chopped walnuts

Instructions

  1. In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, salt, baking powder, baking soda, sugar, and ground cinnamon.
  2. Stir in the warm water until combined. The dough will be sticky and shaggy—that’s perfect.
  3. Fold in cranberries, raisins, and walnuts until evenly distributed.
  4. Cover the bowl with a kitchen towel and let the dough rise at room temperature for at least 12 hours or overnight.
  5. Preheat your oven to 450°F (230°C).
  6. Place a Dutch oven (with lid) inside to heat up for 30 minutes.
  7. Once preheated, carefully turn the dough out onto a floured surface, shape it gently, and place it into the hot Dutch oven.
  8. Cover with the lid and bake for 30 minutes.
  9. Remove the lid and bake for an additional 15 minutes until the loaf is golden brown.
  10. Let the bread cool on a wire rack before slicing.
