1½ cups room-temperature water
2–3 tablespoons honey
1 teaspoon active dry yeast
3 cups bread flour or all-purpose flour
1 teaspoon kosher salt
1 teaspoon ground cinnamon
¾ cup dried cranberries
½–¾ cup raisins
½ cup chopped walnuts
Instructions
Stir water and honey, sprinkle yeast, rest until foamy.
Combine dry ingredients in a bowl.
Mix wet and dry until shaggy.
Cover and rise 8–10 hours.
Shape and refrigerate overnight.
Preheat Dutch oven to 450°F.
Score dough and bake covered 30 minutes.
Uncover and bake 15–20 minutes.
Cool before slicing.
Notes
Make sure to use fresh yeast for the best rise.
Adjust the amount of sugar according to your preference.
This bread is best enjoyed fresh but can be stored in an airtight container for a few days.
