8 oz penne pasta
2 cups broccoli florets
1 lb boneless, skinless chicken breast, cut into cubes
2 tbsp olive oil
3 garlic cloves, minced
1 cup heavy cream
1 cup Parmesan cheese, grated
1 tsp Italian seasoning
Salt and pepper to taste
Chopped fresh parsley for garnish
Instructions
In a large pot, bring salted water to a boil. Cook penne according to the package directions until just tender. Add broccoli florets in the last 3 minutes of cooking. Drain and set aside.
Heat olive oil in a large skillet over medium heat. Add cubed chicken and season with salt and pepper. Cook for 5-7 minutes, stirring occasionally, until chicken is cooked through.
Add minced garlic to the skillet and sauté for 1-2 minutes until fragrant. Lower the heat slightly and pour in the heavy cream, bringing it to a gentle simmer. Slowly add Parmesan cheese and Italian seasoning, stirring constantly until the sauce is smooth and creamy.
Add the cooked pasta and broccoli to the sauce. Toss to coat everything evenly, cooking for another 2-3 minutes to blend the flavors.
Remove from heat and sprinkle with chopped parsley. Serve hot.
Notes
Feel free to substitute the chicken with shrimp or tofu for a different protein option.
