4 pieces boneless, skinless chicken breasts
6 slices bacon, chopped
1 medium onion, diced
3 cloves garlic, minced
1 cup chicken broth
1 tablespoon Worcestershire sauce
1 teaspoon Dijon mustard
1 teaspoon dried thyme
1 teaspoon paprika
½ cup sour cream
½ cup heavy cream
to taste Salt and pepper
to taste Fresh parsley, chopped (for garnish)
12 oz egg noodles (or pasta of your choice)
Instructions
In a large skillet over medium heat, cook the chopped bacon until crispy. Remove with a slotted spoon and set aside, leaving the bacon grease in the skillet.
Sear the chicken breasts in the same skillet for 2-3 minutes per side until golden brown, then transfer to the slow cooker.
Sauté the diced onion and minced garlic in the same skillet for about 2 minutes until soft and fragrant.
Add the chicken broth, Worcestershire sauce, Dijon mustard, thyme, and paprika to the skillet. Stir to combine and bring to a gentle simmer for about 1-2 minutes.
Pour the sauce over the chicken in the slow cooker, cover, and cook on LOW for 4 hours or HIGH for 2.5 hours until the chicken is tender.
Once fully cooked, shred the chicken in the slow cooker with two forks. Stir in the sour cream, heavy cream, salt, and pepper, and let it warm through for another 10 minutes on LOW.
Cook the egg noodles according to package instructions, drain, and set aside.
Spoon the creamy stroganoff over the cooked noodles, top with crispy bacon and fresh parsley, and enjoy!
Notes
For a richer flavor, consider using homemade chicken broth.
This dish can also be served over rice or mashed potatoes if preferred.
