A refreshing and creamy salad featuring shrimp, cucumbers, and a yogurt dressing, perfect for a light meal.

Ingredients

  • 1 lb cooked shrimp, peeled and deveined
  • 2 medium cucumbers, sliced thinly
  • 1 cup plain Greek yogurt
  • 2 tbsp fresh dill, chopped (or 1 tbsp dried dill)
  • 2 tbsp freshly squeezed lemon juice
  • Salt and pepper to taste
  • 1 small red onion, diced
  • 1 cup cherry tomatoes, halved

Instructions

  1. Gather and prepare all ingredients: wash cucumbers and slice thinly; halve cherry tomatoes.
  2. In a bowl, mix Greek yogurt, lemon juice, dill, salt, and pepper to create the dressing.
  3. Gently fold in the cucumbers, shrimp, red onion, and cherry tomatoes into the dressing.
  4. Toss until all ingredients are well coated.
  5. Cover and chill in the refrigerator for at least 15-20 minutes before serving to enhance flavors.
