1 1/2 cups uncooked white rice
1 can (10.5 oz) of French onion soup
1 1/2 cans of water (use the empty soup can to measure)
1/4 cup of butter, cut into small pieces
1 lb. chicken breast, cubed and boneless
1 1/2 cups of Gruyere cheese, shredded
1 packet (1 oz) of dry onion soup mix
1 cup crispy French fried onions
Instructions
Turn on your oven to 350°F (175°C). Spread the rice evenly in a 13×9-inch pan.
Mix in cubed chicken, French onion soup, and water. Sprinkle the dry onion soup mix evenly over the mixture.
Cover the casserole with shredded Gruyere cheese and seal it with foil.
Bake for about 1 hour and 15 minutes, making sure the rice is soft and the chicken is fully cooked.
Take the casserole out of the oven and remove the foil. Scatter the French fried onions over the top and pop it back in for 5 minutes to get them nice and crunchy.
Notes
Ensure the rice is fully cooked before serving.
You can substitute Gruyere cheese with Swiss cheese if desired.
Adjust cooking time if using a different type of rice.
