Creamy Garlic Chicken Pan is a delectable dish featuring tender chicken fillets simmered in a rich and creamy garlic sauce. Perfectly paired with mashed potatoes, rice, or pasta, it makes for a comforting meal.

  • 2 boneless, skinless chicken breasts, halved horizontally into 4 fillets
  • 1 teaspoon fine salt
  • 0.25 teaspoon freshly cracked black pepper
  • 1 teaspoon sweet paprika
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 35 grams plain (all-purpose) flour
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 1 tablespoon unsalted butter (for sauce)
  • 1 tablespoon freshly minced garlic
  • 125 millilitres chicken stock
  • 300 millilitres thickened (heavy) cream
  • 1 teaspoon dijon mustard
  • 50 grams finely grated parmesan cheese
  • Sea salt flakes, to taste
  • Freshly cracked black pepper, to taste
  • Mashed potatoes, steamed rice, or cooked pasta (to serve)
  • Steamed green vegetables (to serve)
  • 1 tablespoon finely chopped flat-leaf parsley (for garnish)
  • Lemon wedges (for serving)

Instructions

  1. Season the chicken fillets evenly with salt, black pepper, sweet paprika, onion powder, and dried thyme. Dredge each piece in flour, ensuring all surfaces are uniformly coated.
  2. Heat olive oil and 1 tablespoon unsalted butter in a large, deep frying pan over medium-high heat. Place the floured chicken in the pan and cook for 5–6 minutes, turning once, until just cooked through and lightly golden.
  3. Transfer the cooked fillets to a plate and set aside to rest.
  4. In the same pan, melt 1 tablespoon butter. Add minced garlic and sauté for 30 seconds, stirring constantly.
  5. Pour in chicken stock and allow to simmer for 1–2 minutes, reducing by at least half. Incorporate the cream and dijon mustard, reduce heat to medium, and cook for a further 2 minutes until slightly thickened.
  6. Stir in grated parmesan, season the sauce to taste with sea salt and black pepper, then return the chicken fillets to the pan. Simmer for 2–3 minutes until the chicken is fully heated.
  7. Serve the creamy garlic chicken with mashed potatoes, rice, or pasta, and accompany with steamed greens. Garnish with fresh parsley and a squeeze of lemon.
