1 cup orzo pasta
2 tablespoons butter
4 cloves garlic, minced
2 cups vegetable broth
1 cup heavy cream
1 cup grated Parmesan cheese
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions
Cook the orzo in a large pot of boiling salted water following the package directions until it is al dente. Drain it and set it aside.
In the same pot, melt the butter over medium heat. Add the minced garlic and cook for 1-2 minutes until it becomes fragrant.
Pour in the vegetable broth and bring to a simmer. Lower the heat and mix in the heavy cream, letting it warm up without boiling.
Slowly incorporate the grated Parmesan cheese, stirring constantly until the cheese melts completely and the sauce becomes smooth and creamy. Adjust the seasoning with salt and pepper to your taste.
Return the cooked orzo to the pot, stirring until it is evenly coated with the sauce. Let it cook for another 2-3 minutes to ensure everything is well blended.
Serve hot, garnished with freshly chopped parsley.
Notes
This dish can be easily adapted by adding vegetables or proteins like chicken or shrimp.
For a lighter version, you can substitute half-and-half for the heavy cream.
