A rich and comforting dish featuring seared steak, creamy garlic sauce, and roasted butternut squash, perfect for any occasion.

Ingredients

  • Steak (sirloin or ribeye)
  • Butternut squash, peeled and cubed
  • Garlic, minced
  • Heavy cream or coconut cream
  • Olive oil
  • Salt and pepper
  • Fresh herbs (optional)
  • Cooking spray or butter (for the pan)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peeled and cube the butternut squash into bite-sized pieces.
  3. Toss them with olive oil, salt, and pepper, and spread evenly on a baking sheet.
  4. Roast for about 20-25 minutes until tender and caramelized.
  5. Season the steak with salt and pepper.
  6. Heat a skillet over medium-high heat, adding olive oil.
  7. Cook the steak for about 3-4 minutes per side for medium-rare.
  8. Remove the steak and let it rest.
  9. Sauté minced garlic in the same skillet for 1 minute.
  10. Pour in heavy cream and let it simmer.
  11. Slice the rested steak against the grain.
  12. Arrange the roasted squash on each plate, topped with steak slices.
  13. Drizzle with creamy garlic sauce and garnish with fresh herbs.
