Ingredients
Scale
1 cup orzo pasta
2 tablespoons olive oil
2 cloves garlic, minced
4 cups fresh spinach, chopped
1 cup heavy cream
1/2 cup grated Parmesan cheese
Salt and pepper to taste
1/4 teaspoon red pepper flakes (optional)
Fresh parsley, chopped (for garnish)
Instructions
Bring a large pot of salted water to a boil. Add the orzo and cook according to package instructions until al dente, about 8-10 minutes. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes, or until fragrant.
Add the chopped spinach to the skillet and cook for 2-3 minutes, or until wilted.
Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese until melted and creamy.
Add the cooked orzo to the skillet, mixing well to combine. Season with salt, pepper, and red pepper flakes if using. Cook for an additional 2-3 minutes to heat through.
Remove from heat and garnish with fresh parsley before serving.
