2 boneless, skinless chicken breasts
8 ounces fettuccine pasta
2 tablespoons olive oil
3 cloves garlic, minced
1 cup heavy cream
1/2 cup chicken broth
1 cup sun-dried tomatoes, chopped
2 cups fresh spinach
1/2 cup grated Parmesan cheese
1 teaspoon Italian seasoning
Salt and pepper to taste
Fresh basil for garnish
Instructions
Begin by cooking the fettuccine pasta according to package instructions until al dente. Drain and set aside.
Season the chicken breasts with salt, pepper, and Italian seasoning.
In a large skillet, heat olive oil over medium heat. Add the chicken breasts and cook for 6-7 minutes on each side, or until cooked through and golden brown. Remove from the skillet and let rest for a few minutes before slicing.
In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
Pour in the heavy cream and chicken broth, stirring to combine. Bring to a gentle simmer.
Add the chopped sun-dried tomatoes and fresh spinach to the skillet, cooking until the spinach is wilted.
Stir in the grated Parmesan cheese until melted and the sauce is creamy. Season with additional salt and pepper to taste.
Add the cooked fettuccine to the skillet, tossing to coat the pasta in the creamy sauce.
Slice the chicken and place it on top of the pasta. Garnish with fresh basil before serving.
Notes
For a lighter version, you can substitute half and half for heavy cream.
Feel free to add additional vegetables such as mushrooms or bell peppers.
