  • 1/2 cup unsalted butter (softened)
  • 4 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • Fresh berries (strawberries, blueberries, raspberries)
  • Mint leaves

Instructions

  1. In a large mixing bowl, beat softened butter and granulated sugar until light and fluffy (3-5 minutes).
  2. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  3. In another bowl, whisk together flour, baking powder, and salt. Gradually add to the wet mixture, alternating with milk.
  4. Grease and flour a 9-inch round cake pan.
  5. Pour the batter into the prepared pan and bake for 30 minutes, or until a toothpick comes out clean.
  6. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  7. In a chilled bowl, beat heavy cream with powdered sugar and vanilla extract until soft peaks form.
  8. Frost the cooled cake with whipped topping and garnish with fresh berries and mint leaves. Slice and enjoy!
