Instructions

  1. Whisk together the eggs, almond flour, and vanilla extract in a bowl until smooth.
  2. Heat a non-stick skillet over medium heat and add butter or oil.
  3. Pour in a small amount of the batter to form a thin crepe. Cook for about 2-3 minutes until golden brown, flip, and cook for another minute.
  4. Repeat this process with the remaining batter.
  5. Combine the softened cream cheese with sweetener (if using) in a separate bowl and gently fold in the blueberries.
  6. Spread the cream cheese mixture onto each crepe, roll them up tightly, and serve immediately.
