1.5 pounds baby potatoes
3 tablespoons olive oil
4 cloves garlic, minced
1 teaspoon sea salt
1/2 teaspoon freshly ground black pepper
1 teaspoon dried rosemary or thyme
1/2 teaspoon paprika
2 tablespoons chopped fresh parsley (optional)
Grated parmesan cheese (optional)
Instructions
Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper or a silicone mat.
Wash and scrub baby potatoes, then pat dry completely. Cut each potato in half.
Place halved potatoes in a mixing bowl. Add olive oil, garlic, salt, pepper, herbs, and paprika. Toss to coat evenly.
Arrange potatoes cut-side down on the prepared baking sheet in a single layer. Do not overcrowd.
Roast for 30–35 minutes, flipping halfway through, until golden and crisp on the outside and tender inside.
Garnish with chopped parsley and a sprinkle of grated parmesan if using. Serve immediately.
