  • 1/2 cup breadcrumbs
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 4 large onions, thinly sliced
  • 2 cups beef broth
  • 1 tsp fresh thyme leaves
  • 1 cup shredded Gruyere cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large mixing bowl, combine ground beef, breadcrumbs, egg, minced garlic, salt, and pepper. Mix until blended.
  2. Shape the mixture into 1.5-inch meatballs.
  3. In a skillet, heat olive oil over medium heat and caramelize sliced onions for about 15-20 minutes.
  4. Transfer caramelized onions to a crock pot; add beef broth and thyme.
  5. Place meatballs into the crock pot ensuring they are submerged in the sauce.
  6. Cover and cook on low for 4 hours until meatballs are cooked through.
  7. Transfer to an oven-safe dish, sprinkle with cheese, and broil for 2-3 minutes until melted.
  8. Serve warm garnished with chopped parsley.
