  • 1 large yellow onion (diced)
  • 3 cloves garlic (minced)
  • 3 medium russet potatoes (peeled and cut into 3/4-inch cubes)
  • 3 carrots (peeled and sliced 1/2 inch thick)
  • 2 celery ribs (sliced)
  • 15 oz can kidney beans (rinsed and drained)
  • 14.5 oz can diced tomatoes
  • 15 oz can tomato sauce
  • 3 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1 bay leaf
  • 1 tsp kosher salt (plus more to taste)
  • 0.5 tsp black pepper
  • 1 tsp sugar (optional, only if tomatoes taste very acidic)

Instructions

  1. Heat a large skillet over medium heat. Add the ground beef, breaking it up with a spatula. Cook until it’s mostly browned, about 4 to 5 minutes.
  2. Stir in the diced onion and continue cooking until softened, about 3 minutes. Add the minced garlic, cooking for about 30 seconds until fragrant.
  3. Drain excess fat if necessary. Now, it’s time to transfer the ingredients to the slow cooker.
  4. Add in the chopped potatoes, carrots, celery, kidney beans, diced tomatoes, tomato sauce, beef broth, Worcestershire sauce, paprika, thyme, bay leaf, salt, and pepper.
  5. Spoon the browned beef and onion mixture over the top. Gently stir to mix everything together. If your tomatoes taste sharp, add the optional sugar.
  6. Cover and cook on LOW for 420 minutes, or HIGH for 240 minutes, until the potatoes and carrots are fork-tender and the broth thickens slightly. Avoid lifting the lid during cooking to ensure the steam stays locked in.
  7. Once cooked, discard the bay leaf. Taste the stew and adjust the seasoning as needed. A splash of apple cider vinegar can brighten up the flavors beautifully.
  8. Ladle the stew into bowls and serve hot, savoring that rich, aromatic experience.
