- 4 boneless, skinless chicken breasts
- 1 can (10.5 oz) cream of chicken soup
- 1 can (10.5 oz) chicken broth
- 1 package (12 oz) stuffing mix
- 1/2 cup chopped celery
- 1/2 cup chopped onion
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Optional: 1/2 cup water for added moisture
- Arrange the chicken breasts at the bottom of your slow cooker. Sprinkle with salt, pepper, garlic powder, and dried thyme.
- In a mixing bowl, whisk together the cream of chicken soup and chicken broth until smooth. Pour this over the chicken in the slow cooker.
- In another bowl, combine the stuffing mix with the chopped celery and onion. For a juicier stuffing, stir in 1/2 cup of water.
- Evenly distribute the stuffing mixture on top of the chicken and soup mixture in the slow cooker.
- Cover and cook on low for 6-7 hours, or on high for 3-4 hours, until the chicken is thoroughly cooked and tender.
- Once cooking is complete, shred the chicken using two forks and mix it with the stuffing before serving.

- For added flavor, you can include herbs such as rosemary or sage.
- This dish pairs well with steamed vegetables or a salad.
