Crockpot Chicken and Stuffing is a simple comfort meal that combines tender chicken with savory stuffing for a hearty dish.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 can (10.5 oz) cream of chicken soup
  • 1 can (10.5 oz) chicken broth
  • 1 package (12 oz) stuffing mix
  • 1/2 cup chopped celery
  • 1/2 cup chopped onion
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Optional: 1/2 cup water for added moisture

Instructions

  1. Arrange the chicken breasts at the bottom of your slow cooker. Sprinkle with salt, pepper, garlic powder, and dried thyme.
  2. In a mixing bowl, whisk together the cream of chicken soup and chicken broth until smooth. Pour this over the chicken in the slow cooker.
  3. In another bowl, combine the stuffing mix with the chopped celery and onion. For a juicier stuffing, stir in 1/2 cup of water.
  4. Evenly distribute the stuffing mixture on top of the chicken and soup mixture in the slow cooker.
  5. Cover and cook on low for 6-7 hours, or on high for 3-4 hours, until the chicken is thoroughly cooked and tender.
  6. Once cooking is complete, shred the chicken using two forks and mix it with the stuffing before serving.

Notes

  • For added flavor, you can include herbs such as rosemary or sage.
  • This dish pairs well with steamed vegetables or a salad.
  • Leftovers can be stored in an airtight container in the fridge for up to 3 days.
