A warm, flavorful soup combining tender chicken, spices, and vibrant vegetables, perfect for cozy nights.

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 1 cup chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • Salt and pepper to taste
  • Optional toppings: Shredded cheese, sour cream, avocado, cilantro

Instructions

  1. Layer the chicken at the bottom of the crockpot.
  2. Add the black beans, corn, diced tomatoes, taco seasoning, and chicken broth on top.
  3. Stir gently to combine ingredients.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Shred the chicken and return it to the soup.
  6. Season to taste and serve hot with optional toppings.
