- 1 pound boneless, skinless chicken breasts
- 1 can (15 ounces) cannellini beans, rinsed and drained
- 1 can (15 ounces) diced green chilies
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 cup corn (fresh, frozen, or canned)
- 4 cups low-sodium chicken broth
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1 teaspoon chili powder
- ½ teaspoon salt (or to taste)
- ½ teaspoon black pepper
- 1 cup shredded low-fat cheese (optional for topping)
- Fresh cilantro for garnish
- Juice of 1 lime
- Begin by placing the chicken breasts in the bottom of the crockpot.
- In a separate bowl, mix together the cannellini beans, diced green chilies, onion, garlic, and corn.
- Pour the mixture over the chicken in the crockpot.
- Add the chicken broth, cumin, paprika, chili powder, salt, and black pepper on top of the other ingredients in the crockpot.
- Cover the crockpot and set it to cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
- Once cooked, remove the chicken breasts from the crockpot and shred them with two forks.
- Return the shredded chicken back to the pot and stir to combine all ingredients.
- Add the lime juice and stir again. Adjust seasoning if necessary.
- Serve warm, topped with shredded cheese and fresh cilantro if desired.
Notes
- For a spicier chili, add jalapeños or increase the amount of chili powder.
- This recipe can be easily doubled for larger servings.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
