A tender and flavorful chicken dish cooked in a luscious honey lemon sauce, perfect for busy weeknight dinners.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 1/4 cup fresh lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. Combine the honey, soy sauce, lemon juice, garlic, ginger, black pepper, and salt in a mixing bowl.
  2. Place the chicken breasts in the crockpot and pour the sauce over them.
  3. Cook on low for 6-7 hours or on high for 3-4 hours until tender.
  4. Mix cornstarch and water to make a slurry, adding it to the crockpot in the last 30 minutes if you want a thicker sauce.
  5. Serve the chicken with the sauce drizzled over it, garnished with parsley.

Notes

For richer flavor, marinate the chicken in the sauce overnight. Serve with steamed rice or a fresh salad.
