1 package (16 oz) potato and cheese pierogi, frozen
1 lb kielbasa, sliced
1 onion, chopped
2 cups drained sauerkraut
1 cup cheddar cheese, shredded
1 cup sour cream
1 cup chicken broth
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions
Layer half of the frozen pierogi at the bottom of a large crockpot.
Add half of the sliced kielbasa, half of the chopped onion, and half of the sauerkraut on top.
Sprinkle half of the shredded cheddar cheese over these ingredients.
In a bowl, combine the sour cream, chicken broth, garlic powder, onion powder, salt, and pepper. Pour half of this mixture over the layers in the crockpot.
Repeat the layering process with the remaining pierogi, kielbasa, onion, sauerkraut, and cheese. Pour the rest of the sour cream mixture on top.
Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, until the pierogi are tender and the kielbasa is cooked through.
Garnish with fresh parsley before serving for a touch of color.
Notes
For added flavor, consider adding smoked paprika or a touch of mustard to the sour cream mixture.
