  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1/4 cup green olives, sliced
  • 1/4 cup raisins
  • 1 tablespoon capers
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 cups cooked white rice
  • Fresh cilantro for garnish

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add the chopped onion and bell pepper, sautéing for about 5 minutes until softened.
  2. Stir in the minced garlic and cook for an additional minute until fragrant.
  3. Add the ground beef to the skillet, breaking it apart with a spoon. Cook until browned, about 5-7 minutes. Drain excess fat if necessary.
  4. Stir in the diced tomatoes, green olives, raisins, capers, cumin, oregano, salt, and pepper. Bring the mixture to a simmer and let it cook for 10-15 minutes, allowing the flavors to meld together.
  5. Serve the picadillo over a bed of fluffy white rice and garnish with fresh cilantro.
