A refreshing and light salad perfect for summer, featuring cucumbers, feta cheese, and a zesty dressing.

Ingredients

  • 3 cups cucumber, thinly sliced
  • ½ small red onion, thinly sliced
  • ¾ cup crumbled feta cheese
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • ½ teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Prep the cucumbers: Wash and slice cucumbers thinly. Peel and deseed if using standard cucumbers. English cucumbers do not require peeling.
  2. Slice the onion: Slice the red onion thinly and soak in cold water for 10 minutes if the flavor is too strong.
  3. Make the dressing: In a small bowl, whisk together olive oil, lemon juice, garlic powder, salt, and pepper.
  4. Toss it all together: In a large bowl, combine cucumbers, onion, dill, and feta. Drizzle dressing and toss gently.
  5. Chill: Let the salad sit in the fridge for 15–30 minutes to enhance flavors and crispness, if desired.

  • This salad is best served chilled for optimal flavor.
  • For added crunch, you can slice the cucumbers thicker.
