  • 1 tablespoon fresh dill, chopped, plus extra for garnish
  • 4 ounces cream cheese, softened
  • 1/3 cup dried cranberries
  • 1/2 teaspoon garlic powder
  • 1 tablespoon mixed fresh herbs, finely chopped (such as parsley and chives)
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. Slice the cucumbers paper-thin using a mandoline slicer or sharp knife and place them in a large mixing bowl.
  2. In a separate bowl, blend softened cream cheese with garlic powder, finely chopped fresh herbs, salt, and black pepper until smooth and creamy.
  3. Add the herbed cream cheese mixture to the sliced cucumbers and gently toss to ensure even coating.
  4. Fold in dried cranberries and chopped dill evenly throughout the mixture.
  5. Cover the bowl and refrigerate for at least 30 minutes to allow flavors to meld.
  6. Just before serving, garnish with additional fresh dill.
