A refreshing salad combining crunchy cucumbers, creamy mozzarella, and vibrant cherry tomatoes, perfect for summer gatherings.

Ingredients

  • 1 large Cucumber
  • 8 oz Mozzarella Balls
  • 1 cup Cherry Tomatoes
  • 1 medium Avocado
  • 1/4 cup Fresh Basil
  • 1/4 cup Olive Oil
  • 2 tbsp Balsamic Vinegar
  • 2 cloves Minced Garlic
  • to taste Salt
  • to taste Pepper

Instructions

  1. Slice the cucumbers into thin rounds and halve the cherry tomatoes.
  2. Dice the avocado and set it aside.
  3. In a large bowl, layer the cucumber, cherry tomatoes, mozzarella balls, diced avocado, and fresh basil.
  4. In another bowl, whisk together olive oil, balsamic vinegar, minced garlic, salt, and pepper.
  5. Drizzle the dressing over the salad just before serving and gently toss to coat.
  6. Let the salad rest at room temperature for 15-20 minutes before serving.

Notes

  • Use fresh mozzarella packed in water for best results.
  • Diced avocado should be added just before serving to maintain its color and texture.
  • Adjust the amount of balsamic vinegar to taste.
