A rich and creamy Alfredo lasagna soup that combines the flavors of lasagna with a delightful soup base.

Ingredients

  • 2 tablespoons Butter
  • 3 cloves Garlic, minced
  • 1/4 cup All-purpose flour
  • 4 cups Chicken broth
  • 1 cup Heavy cream
  • 1 cup Parmesan cheese, grated
  • 1 cup Mozzarella cheese, shredded
  • 1 teaspoon Italian seasoning
  • Salt & pepper to taste
  • 8 ounces Rigatoni or lasagna noodles (cooked)
  • 1/2 cup Toasted breadcrumbs
  • Fresh parsley or basil for garnish

Instructions

  1. In a large pot, melt butter and sauté garlic for 1-2 minutes.
  2. Stir in flour to form a roux. Cook until golden.
  3. Slowly whisk in chicken broth. Stir until smooth.
  4. Add heavy cream, Italian seasoning, salt, and pepper. Simmer for 5 minutes.
  5. Lower heat and stir in Parmesan and mozzarella until melted.
  6. Add cooked pasta and let it warm through.
  7. Serve in bowls topped with toasted breadcrumbs and herbs.

Notes

  • Feel free to add vegetables like spinach or mushrooms for extra nutrition.
  • This soup can be made ahead of time and reheated.
