A flavorful twist on traditional rice, combining fresh mango and zesty lime for a delicious side dish.

  • 1 cup basmati rice
  • 1 ¾ cups water or vegetable broth
  • 1 ripe mango, diced
  • 1 lime, zested and juiced
  • ½ cup fresh cilantro, chopped
  • 1 tablespoon olive oil or coconut oil
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. In a medium saucepan, combine the rinsed rice with 1 ¾ cups of water or vegetable broth and a pinch of salt. Bring to a boil over medium-high heat.
  3. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 15-20 minutes, until all the liquid is absorbed.
  4. Remove from heat and let it sit covered for 5 minutes.
  5. Uncover the rice and fluff it gently with a fork.
  6. Prepare your mango and lime by dicing the mango and zesting and juicing the lime.
  7. In a large mixing bowl, combine the cooked rice, diced mango, lime zest, lime juice, and chopped cilantro.
  8. Drizzle in the olive oil or coconut oil, then season with salt and pepper to taste.
  9. Gently stir everything together, being careful not to mash the mango pieces.
  10. Serve the mango lime rice in a beautiful bowl, garnished with lime wedges and extra cilantro if desired.
