- 1 cup basmati rice
- 1 ¾ cups water or vegetable broth
- 1 ripe mango, diced
- 1 lime, zested and juiced
- ½ cup fresh cilantro, chopped
- 1 tablespoon olive oil or coconut oil
- Salt, to taste
- Pepper, to taste
- Rinse the rice under cold water until the water runs clear.
- In a medium saucepan, combine the rinsed rice with 1 ¾ cups of water or vegetable broth and a pinch of salt. Bring to a boil over medium-high heat.
- Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 15-20 minutes, until all the liquid is absorbed.
- Remove from heat and let it sit covered for 5 minutes.
- Uncover the rice and fluff it gently with a fork.
- Prepare your mango and lime by dicing the mango and zesting and juicing the lime.
- In a large mixing bowl, combine the cooked rice, diced mango, lime zest, lime juice, and chopped cilantro.
- Drizzle in the olive oil or coconut oil, then season with salt and pepper to taste.
- Gently stir everything together, being careful not to mash the mango pieces.
- Serve the mango lime rice in a beautiful bowl, garnished with lime wedges and extra cilantro if desired.
