  • 1 cup canned pumpkin puree
  • 1/3 cup melted coconut oil (or vegetable oil)
  • 1/2 cup brown sugar, packed

  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/2 cup chopped nuts (walnuts or pecans, optional)
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or spray with non-stick cooking spray.
  2. Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas, pumpkin puree, melted coconut oil, brown sugar, granulated sugar, eggs, and vanilla extract. Mix well until all the wet ingredients are well blended.
  3. Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt until evenly combined.
  4. Combine Both Mixtures: Gradually add the dry ingredients to the wet mixture. Stir gently until just combined. Be careful not to overmix; a few lumps are perfectly fine.
  5. Add Nuts and Chocolate (optional): If you’re using nuts and chocolate chips, fold them into the batter gently.
  6. Fill Muffin Tins: Divide the batter evenly among the prepared muffin cups, filling them about 2/3 full.
  7. Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
