  • 1 pound ground chicken
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and black pepper
  • 8 small tortillas
  • 1 cup shredded mozzarella or Jack cheese
  • 1/2 cup chopped dill pickles
  • 2 tablespoons pickle brine
  • 1 cup shredded cabbage
  • 1/2 cup cottage cheese blended with 1 teaspoon ranch seasoning and a squeeze of lemon

Instructions

  1. Season ground chicken with garlic powder, paprika, salt, and pepper and divide into 8 balls.
  2. Heat a skillet over medium-high heat. Place a ball on a tortilla, top with 2 tablespoons of cheese, and smash it thin.
  3. Cook the cheese side down for 2 minutes until the frico is crisp, then flip to cook the chicken for 3 to 4 minutes.
  4. Toss shredded cabbage with chopped pickles and pickle brine to create a quick slaw.
  5. Blend cottage cheese with ranch seasoning and lemon for a drizzle.
  6. Fill each taco with slaw and drizzle with the ranch cottage sauce.
  7. Add extra pickle bits for crunch.
  8. Serve immediately for maximum crispy cheese edges.
